Kawasaki Caribbean Challenge came out for the Super Nintendo in 1993, published by Gametek. You control a rider on a Kawasaki jet ski, racing through tropical island courses against other watercraft. The main goal is straightforward: win the race. The signature mechanics involve navigating tight, obstacle-filled waterways, using a turbo boost for short bursts of speed, and wrestling with the somewhat slidey, momentum-based physics. The pacing is fast, and the difficulty comes from the crowded tracks and the need to perfectly time your boosts to avoid spinning out.
